Stressed Out Day, Mango Sunset

This will be brief but savory. Home this evening late and weary, dinner was a punt. I always grill two extra chicken breasts for salad or sandwich material later. I had saved a couple of Rudy's whole grain hamburger buns(organic and delicious) from our burgers that we grilled on Sunday. Also squirreled away half a succulent mango from a late night dessert last evening. Sauteed about 2 tablespoons diced red onion, one Thai chili pepper in extra virgin olive oil. I added the coarsely chopped mango and let it ruminate on a low heat for about 6 minutes. The buns were split and the bottom halves were drizzled with teriyaki sauce. I piled on sliced, grilled chicken on the top half and topped the chicken with the mango salsa. These little gems were broiled for about 10 minutes and were devoured with gusto and a sprinkling of dried pepper flakes.The entire experience was enhanced by the addition of a glass of Bonterra Chardonnay. Oh, oh, after dinner, we noticed the quality of the dusky light and went out on the deck to view a beautiful, yet smokey looking sunset.
