Grillin Girl

Maybe it is the time of year, but it seems my favorite meals are meals cooked over the coals these days. Yes, over the coals on my Webber.I have not succumbed to the lure the gas grill-not yet. There is something so alluring in the smokey taste of charcoal or wood grilled food, and besides-what would my husband do with those wonderful little pieces of Alder wood that he makes just to toss on the coals to up the flavor ante? Well, it was another "quicky" meal borne of necessity- ingredients on hand and a strong yen to grill. These beautiful Indian summer days are so seductive to the cook. The garden is brimming with zucchini, cucumbers, peppers and parsley. The garlic is already harvested and sits drying in a flat basket in the kitchen. That garlic is so oily and succulent, it just begs to be roasted, sauteed and, yes! grilled. Tossed on some chicken apple sausages in a foil packet with olive oil. Halved two large(yes, they are all large right now but still sweet and full flavored) zucchini.Slathered them with olive oil and a dusting of pungent organic curry blend of spices and put them in another packet with about 10 garlic cloves. A hot fire was ready. Everything cooks quickly and must be hovered over to avoid scorching, but this is the only way to achieve the beautiful and savory carmelization of both the garlic and to a lesser extent, the zucchini. Served the sausages with a bit of Annie's organic mustard and mama mia!!!,
